Recipes

Mustard Greens with Tomatoes, Onions, and Chilies
by Deborah Madison

Serves 4

2 lb. mustard greens or collards, washed, stems removed, and coarsely chopped
1 Tbsp. olive oil
1 medium onion, peeled, cut into ½-inch squares
3 medium tomatoes, peeled, seeded, and chopped
2 to 3 garlic cloves, finely chopped
3 small dried red chilies or several pinches red pepper flakes
salt
vinegar

Steam the greens over boiling water for roughly 5 minutes or until they are tender.
Heat the oil in a large skillet.
Add the onions and cook them over medium-high heat for about 2 minutes.
Add the tomatoes, garlic, and chilies.
Add salt to taste and cook for another minutes, then add the greens.
Mix everything together and cook until the greens are thoroughly warmed.
Check to see if the greens need additional salt and add if needed.
Add a splash of vinegar and serve.

Hello!

We have some news for you this week for you Wedge Oak farm buyers. They will be taking this week off of their meat orders, but will still have their eggs available. They are hosting an Outstanding in the Field Dinner on their farm on Thursday evening, and need to focus all of their energy into getting their farm ready! There are still some tickets available to this special event. You can read about it and purchase tickets at outstandinginthefield.com/event/wedge-oak-farm/

Also, they have put their reservations up for their turkeys at Thanksgiving. There is a $25.00 deposit which is paid at the time of making the reservation, and then the rest is due at pick up. You will be contacted by Wedge Oak asking what size turkey preference you have. These turkeys will be frozen, so pick up will probably be the Wednesday a week before Thanksgiving. Details to be worked out soon!

Please make sure to support our other local vendors. Little Seed farm has wonderful soaps and body care products made with their very own goat milk. Dozen Bakery has the wonderful fall time treat of their apple gallette. Also, Bear Creek Farm has some new items up that you will be excited to try!

Lots of great veggies and flowers, as well!

South Cumberland Farmer's Market:  Poultry Processing Plant for Sale


We wanted to let your group know that we are selling our poultry plant! It is not for a lack of business, we can assure you. Quite the contrary: our business has grown faster than expected and more than these old bones can keep up with. So for health reasons, we are searching for a buyer who will continue the effort we started, which was to bring affordable and convenient USDA poultry processing to Tennessee. We met our goal and then some. Our customer base comes to us from all parts of Tennessee, Alabama and Georgia. We have had requests for ducks and quail, and even emu! Now that the hard part is done, ie; building a plant and creating a HACCP plan that passes federal regulations, the business is poised to really take off for the right person (or people).

The sale price will include the plant, equipment, HACCP plan, staff, customer base and training. The plant sits on 5 cross fenced acres with a 3/2 house, pond and barn and is located in White County near Sparta and just 20 miles south of Cookeville. The new owner merely needs to take a short HACCP class and request their own grant of inspection which will be simple since the building, plan and staff are already approved and proven.

We are still booking appointments and processing until the right person comes along to continue what we began. Please pass this information on to any interested parties you may know. Please call for price and details. Thank you for any assistance you might give.

The Wednesday Market:  Reminder to Order; A Boy's Winter Garden


Good afternoon to everyone in The Wednesday Market community. We hope you are having a good day!

This year is my son Stephen’s first year of middle school, and he has Agriculture as an elective class. Today, he will be working on his project. Stephen is planting a winter garden and will be responsible for watering, tending and harvesting it and documenting the results. Yesterday we purchased the materials he needs to build a small raised bed, including starter plants. I really enjoyed the enthusiasm displayed by Stephen and his brother Charlie when it came to time to choose the plants. Stephen chose lettuce, broccoli, turnip greens, and Brussels sprouts. I selected spinach, rosemary, rutabagas, cabbages and Swiss chard. Charlie is in Kindergarten and does not yet read, but keenly checked the pictures on the labels of the various plants. “Look, Mama, this one is for pizza!” Charlie exclaimed as he chose basil. “I want this one, too, because it’s for deviled eggs,” he said, and picked up a pot of parsley. Now, I know that basil is not a winter plant, but I just could not say no to Charlie’s excitement, not to mention that the plant was lush and green and healthy-looking. And, as several of my Wednesday Market friends know, basil is my favorite herb!

As luck would have it, rain is forecast for later on today, and so, I’d better get to work helping the boys build and plant. Hopefully the rain will come after the planting is done, and we will be well on our way to having some homegrown vegetables soon.

MY DAILY BREAD also does Organic Jams, Jellies, and Preserves, including the delicious Organic Rosy-Peach Jam and the Chemical-Free Fig Preserves. Good morning, little local market of love!!

Yesterday was a big day in downtown Urbana as we celebrated another amazing Chili Cook Off!! There are two huge, Monument Square District sponsored events, downtown. Art Affair is one (My baby along with my co-chair, and committee), and then Chili Cook Off! These events are huge. Not only do they bring in lots of people, lots of revenue, and lots of PR for the downtown, but they also do what this market is always talking about…they bring together community spirit and local pride!

I was a vendor, yesterday, as I usually am. I was set up in conjunction with Oakview Farm Meats, as I usually am. My other neighbors were new chili contestants who went on to win Third place, and as I was nestled in between my neighbors, and surrounded by so many friends who continued to come up to my canopy, give me a hug, give me a high five, talk, dance, wave…I had to just stop and take it all in.

Community spirit and pride make us strong. They makes us proud. They make us believe that we can conquer all as a united local front.

I felt very proud and very loved, yesterday. I love the networking and the building of a stronger and stronger local fabric. It reassured me that through this building of fabric, we can stand strong, we can face anything, and with the help of all of us, we can make a whole happen on the local front.

I am thankful for so much in my Cosmic life but I am most thankful that you put your faith in me, each week, with this market. I am only one person, though, in this local market of love. I also have my ever true, ever wise, Charlene Stapleton. She and Joe of Swisher Hill Herbs are such icons in this community. I love seeing her smiling face, each and every Thursday, as we prepare the market for each of you.

I am thankful for Mark Runyan and the entire Runyan family behind Oakview Farm Meats. He is my other assistant at this market who helps me get your orders out to you, each and every week. They are a power house of a family in this local community, and we are lucky that they are a part of this little local market of love.

Paul Wadsmith and the YMCA…I cannot say ENOUGH about this team!!! We would be very, very sad without the YMCA and their hard work that keeps our financials, houses our market home, and supports us out in the community.

Heather T…we are a market because of her vision, her hard work, and her endless hours in getting this market up and running in the early days and years…

ALFN Local Food Club:  ALFN Foodcraft: Fall Workshops


Good Morning Locavores,

Though our market is closed this week, we’ve got some exciting news: Tickets are now on sale for ALFN’s Fall Fundraiser titled Foodcraft: Fall Workshops. With the holiday season approaching, learn how to create an appetizer plate just in time for your next gathering. Join us on Saturday, October 11th for any or all of 3 consecutive interactive workshops led by some of the best artisan foodies around.

  • At 1:00pm, preservationist extraordinaire Angela Gardner of GardenWorks will teach participants how to make pickles. Fall is in the air and soon it will be the end of a fair growing season; full of late summer stragglers and fall delights. In this session, Angela will demonstrate how to make pickles using the last of the summer’s bounty and also discuss the equipment and techniques to properly can up produce that you will savor throughout the winter. Bring a crack-free pint jar and we’ll put a lid on it.
  • At 2:30pm, Kent Walker will teach folks how to make some of his artisan ricotta cheese. Kent will teach participants how to make this fresh Italian-style cheese using a “direct set” method, giving you the skills you need to replicate this delicious recipe in your own home.
  • At 4:00pm, Ashton Woodward of Arkansas Fresh Bakery will teach you how to make the absolute best Bavarian pretzels. The pretzel is an iconic northern-European bakery snack. Arkansas Fresh makes their soft pretzels using an authentic German process, complete with imported ingredients and a long-fermentation method. In this class, you will learn the fundamentals of baking your own soft pretzels at home. Included in this workshop are some of the hard-to-find ingredients that the bakery uses to make their pretzels for you to take home.

The cost is $25 per session or $60 for all three, and tickets can be purchased online here. Each session will last approximately one hour and will be held at Christ Episcopal Church, 509 Scott Street in downtown Little Rock. All proceeds benefit the Arkansas Local Food Network, a 501c3 nonprofit working to build a stronger local food system.
